Pepsi Chicken, anyone?

Today our Hy-Vee store is having a big "24-hour Stock-up Sale".  Among other things, split chicken breasts are .78/lb today.  At 8'oclock this morning, I picked up the last two packages.  As I waited for the butcher to bring some more out, I got to talking to another young mom also waiting for the chicken.  She said their favorite recipe was to make "Pepsi chicken."  I asked her if this was like beer-can chicken (which is a favorite in this house), because I know you can also make it with cola.  She said no... you mix together 20 oz. of Pepsi and 1 cup of ketchup, then simmer a package of bone-in chicken in it (3-4 lbs) until it is done. 

So... I have approx 22 lbs of chicken in the fridge and a recipe to try tonight.  (The rest of the chicken will be frozen to make chicken and noodles or chicken and rice later on).  I will let you all know how it turns out!

I've never made Pepsi chicken but I have made cola chicken many times and my family loves it. I use 1 can coke, 1 c. ketchup, salt & pepper to taste. I brown the chicken ( I use boneless, skinless chicken breasts), add the sauce and cook on top of the stove until sauce is very thick and the chicken is cooked. Delicious!!

Okay, I made this last night!  Actually, what I did was salt and pepper and  brown 3 large bone-in, skin-on chicken breasts in a nonstick skillet.  Then I placed them in my Crockpot and mixed the Pepsi and ketchup and poured over it all.  It cooked for about 5 hours on high.

The sauce was very liquidy....possibly due to me making it in the Crockpot and it not have a chance to reduce down, plus the added chicken juices while cooking.  So, I ladeled the majority of the sauce out into a saucepan and reduced it down by less than half.  This made a nice, tangy sauce that I poured over the chicken when I served it.  My husband thought it was really good...we were STUFFED!

(A variation I found on the Internet of t his recipe is to use 1/2 cup ketchup and 1/2 cup barbeque sauce instead of the entire 1 cup ketchup.  This may be an interesting variation for another time!)

Vernors Chicken, anyone?

Try Vernor's Chicken!!! For out of Michigan folk, Vernors is a spicy Ginger Ale.  Get two or three pounds of your favorite cut of the bird. Brown the parts in a spoonful of oil or butter. Use a can of Vernors, 2 tbs teriyaki sauce, a chopped garlic clove or two. Cook chicken in a covered dutch oven till tender.Remove chicken to a warm dish.  Reduce sauce till it's how you like--serve with hot steamy rice and a side veggie. Vernors pop/soda can also be reduced in a pan and used as a delicious ham glaze.

I have a pack of legs, I think I will give it a shot.  Its just me and hubby so I only cook like 6 legs at atime, so maybe i will just use half a pepsi.

Luv, have heard of this before, using Pepsi or Coke, whatever your preferance. Also works well with some of your "tougher" beef roasts/cuts. You can bake these in a covered shallow pan in the oven, and they tenderize well. This is makeing me hungry! Let us know how your chix turned out!

Ooooh, I bet a roast would work really well!  I am going to try this recipe tomorrow night and see how it goes over.

My SIL makes something similar using her Crockpot.  She puts a whole chicken in it and then pours a can of Coke and a bottle of BBQ sauce over top of it.  She lets it cook on low for 8 hours or high for 4 hours.  My MIL says it's really good.

What a good idea to use the Crockpot!  I actually didn't get to make this tonight... my hub went over to my SIL's to help install some water heaters, and I hate cooking a full, big supper when it is just me and the kids.  (We ended up having zucchini patties...yum!).  Tomorrow night I am definitely going to make this... maybe I will use the Crockpot :-)

Hey , isn't Kevin a Coke person? LOL!! I also have tried the cola and beef ..but not chicken. I think it would be good.

The recipe sounds interesting, Luv. Bet it will taste something like barbecued chicken. Can't wait to hear how you liked it. And that was some deal on the chicken. I don't blame you for stocking up!
