Pumpkin Chip Cookies

This is a delicious recipe from the Amish Cook archives.  It's  very moist cookie and very appropriate for this time of year.  It takes a chocolate chip cookie and infuses it with the sweet taste of pumpkin.  I haven't had this in years, but it is delicious, I may have to make some!Smile

1 can pumpkin (or equivalent fresh)

2 teaspoons baking soda

4 teaspooons baking powder

1 teaspoon salt

2 teaspoons cinnamon

4 cups flour

2 cups sugar

2 eggs, beaten

2 tablespoons milk

1 cup vegetable oil

2 teaspoons vanilla

6 ounce package of chocolate chips

Mix sugar, oil, eggs, milk, vanilla, and pumpkin.  Sift dry ingredients and add gradually.  Mix well. Stir in chips and then drop by spoonfuls onto lightly greased cookie sheet.  Bake in 375 degree oven for 15 minutes.

Took out the chocolate chips, added brandy soaked raisins and frosted with browned butter frosting.  Yummyyy!!!!!!

Good morning all...I got off work early the other day, and thought that I would surprise my lovely wife with a platter of pumpkin cookies when she got home from work.  This was my first attempt at cookie baking...they turned out WONDERFUL!!!...very, very moist.  The only addition to the recipe that I made was adding some chopped pecans.  My thoughts were to send a heaped platter of cookies to work with my wife....but NO!!...she wants them all to her lonesome....we will talk about selfish sins later...LOL

Going to make these tomorrow...just disovered this site...I have read all of the Amish Cook Cookbooks...I have them all.  I used to sit and read the first one Kevin did with Elizabeth and fantasize about a rural life. (I used to live in Southern California). Well, I now live in Virginia and I am getting my feet wet with a more country life style.  I have a local Mennonite farmer that I purchase my eggs and beef and garden needs from...They have a great shop right on their farm. There is also a local Alpaca farm where I can meet the Alpacas and purchase yarns.  It is so beautiful here...especially in the fall...the leaves are glorious...Soooo...Pumpkin Cookies tomorrow :D

This is my first visit here!  I just discovered the site this evening, and am enjoying it very much, so far!  I can't wait to try this recipe.  :-)

Be sure to use canned whole pumpkin and not pumpkin pie mix.  These are a family favorite and I sometimes frost with brown sugar/butter icing.

I made these last week with two little white pumpkins (pureed) and white chocolate chips. they didn't last long.Innocent

small can, I think 15 ounces is the size

Thanks for posting this recipe - looks great! However, would it be possible to give a specific can size for the pumpkin? I'm thinking it's probably a standard soup can size... Many thanks! NY Baker
