Got Extra Tomatoes?

                                                            AMISH TOMATO PATTIES
This is a recipe I found recently in my old Amish Cook recipe archives, looks like a great way to use up some the summer tomatoes!
1 c. all-purpose flour
1 tsp. sugar
1/4 tsp. dried basil OR
2 tbsp. fresh basil, minced
1 tbsp. parsley, minced
1 egg
Vegetable oil for frying
1 tsp. baking powder
3/4 tsp. salt
4 to 5 fresh tomatoes
1 tbsp. onions, minced
1/2 tsp. Worcestershire sauce
In a large bowl, combine flour, baking powder, sugar, basil and salt. Cut tomatoes into 1/2 inch pieces and drain further on a paper towel. Add them to the flour mixture along with onion, parsley and Worcestershire sauce, but do not mix in. In small bowl, beat egg and add it to the flour-tomato mixture. Blend lightly with a fork. Heat oil (about 1/4 inch) in fry pan. Drop the batter by tablespoons into hot oil. Fry until golden brown on both sides. Keep fritters warm in oven until serving. Serves 4 - 6.

Anyone want to share a good tomato soup recipe that does NOT resemble the commercially canned ones?? Not to be too picky because they are mostly good but the tomato flavor is disappearing from them.

We're making black bean, corn salsa tonight. We planted Amish Paste tomatoes for this. So yummy & healthy too.

Canned 30 qts of tomatoes already and will can a few more before the tomatoes are gone. Also want to make tomato soup to can. So good in the winter.

Sounds really good!! Our tomatoes are just starting to ripen here. Corn,on the other hand seems early and very sweet this year. Hard to figure out nature sometimes!!!

This sounds yummy. Will have to head to the local produce stand tomorrow to get tomatoes. My crop of tomatoes are just sitting there doing nothing this year. However, my cool crop plants are going hog wild!
