Homemade Pizza Casserole

This is a recipe that was often enjoyed by Lovina's mother.  It's very typical of the hearty, easy, "throw-together" casseroles that Amish cooks are famous for.  Elizabeth would use her own homemade cottage cheese in this dish, as well as homemade pizza sauce and sour cream, but obviously you can use store-bought.

Pizza Casserole
Makes 6 to 8 servings

8 ounces noodles, cooked
1 pound hamburger
1 cup diced onion
1 cup fresh sour cream
1 cup pizza sauce
1 cup cottage cheese
1 cup diced or shredded Colby cheese

Cook noodles until tender. Drain and place into 9-inch-by-13-inch baking
dish.

In order, layer hamburger, onion, sour cream, pizza sauce, cottage cheese
and Colby cheese on top of noodles. Do NOT stir.

Bake at 350 degrees for 50 minutes or until cheese on top is bubbly.

I look forward to seeing a recipe/technique on making cottage cheese. I've been told that my grandparents had dairy cattle on the farm that I grew up on and still own. I was told that daily the milk was picked up by the company that purchased their milk and they would tell grandma that they had a sour one (from the day before's pickup) and then the next day grandma would hang pillow cases on the clothes line the next day and the sour milk (delivered the next day) would be poured into the cases and the whey drained from the curd. But that is all that I've been told. I always wondered if there was more to it. The boys (uncles and dad) weren't into such details.

I really enjoy reading and seeing the pictures and videos on your web site. I still like to see The Amish Cook article in my daily paper, The Sidney Daily News. I was wondering if Lovina still makes home made cottage cheese and how she does it? I have been keeping the family in my thoughts and prayers for better health to enjoy our wonderful summer season!

Welcome, TJS, Lovina really doesn't have the time or the dairy cow (her mother had some) to make her own homemade cottage cheese.  Elizabeth's recipe for homemade cottage cheese is in the Original Amish Cook Cookbook...I actually don't have any of those books on me right now or I would post the recipe, but I will get some in in the coming days and will post the recipe then!
