Homemade Cream of Broccoli & Cheese Soup....

I love going through piles and files of old hand-written recipes that I have from the late Elizabeth Coblentz.   I think through the years - at various times - we had different cookbook projects going and she just ended up submitting more recipes than I could use.  They could almost be compiled into a cookbook of their own.  Most of the recipes are written in long-hand on sheets of scrap-paper and are quite simple.  This looks like an interesting recipe for broccoli cheese soup, the unique ingredient is "cottage cheese." I have never heard of that in a soup?  Okay, for anyone who wants to give this recipe a whirl:

2 cups celery, chopped

1 cup onion, finely chopped

1 package (10 ounce) chopped broccoli

1 cup cottage cheese

2 cups whole milk

1 can (10 3 /4 ounce) cream of chicken soup (undiluted)

1 /2 teaspoon salt

1/8 teaspoon pepper

In a saucepan cook broccoli, celery, and onion until tender.  Stir cottage cheese vigorously until smooth (editor's note: for those that have blenders, food processors, or Magic Bullets, these can be used here).  Slowly add milk while continuing to stir. Add chicken soup to cheese-milk mixture.  Blend. Add mixture to cooked, undrained vegetables. Heat on medium until tender.

I made this for supper tonight. Everyone loved it! I followed the recipe as listed. I used an immersion blender to smooth the cottage cheese and to combine with the milk and soup. I also used it to slightly chop up the cooked vegetables after adding them to the cheese-milk mixture. I served it with warm Asiago cheese bread. I will definitely be adding this to this recipe box. And the cheddar broccoli soup will be on within the hour... Thanks Kevin for the granola reminder and this soup is perfect for today as it is a cool (barely in the 50's) and wet northwest day.

It was really good! Oh course I deviated Embarassed. We are having a little thunder and lightening I'll finish in a bit!

It was a quick t & l storm they usually aren't too big of a deal, just didn't want some weird freaky thing to happen to the computer, after all, I am offending people today - (I talked about that on another post)  OK soup - well I really deviated, sort of.

I used 2C milk (I used 1 12oz can of Carnation Evaporated Milk (remember that's the western brand!) + water to equal two cups, 1 can cream of chicken soup and the broccoli; from there we added a little extra water, probably a cup as we added oh, yes, that cupboard staple Velveeta! Probably about 1 1/2C, we were using up what we had in the frig.  For seasoning I used a little Lawry's Seasoned Salt, added the broccoli and let it simmer up, we stirred often.  I don't keep onion or garlic (fresh or dried) on hand as I have sensitivities to those, so I sprinkle in some seasoned salt for the family.  They all really enjoyed this soup, I couldn't eat it.  I really like the idea of using a prepared cream soup as a base, I think that it gave a really nice consistancy - that is a trick I will use again. This was so easy to make and not a big time consumer at all.

I'm sure that the recipe as printed would be wonderful, with the fresh onion, celery and broccoli all melding and if you have those ingredients go for it.  We didn't have any cottage cheese on hand, but we would like to try this sometime when we do.  We do often cook with it, especially in place of expensive ricotta cheese.

We *do* also have Carnation evaporated milk here.  We are not *totally* backward!!!  LOL

(And *no*, you have NOT offending me or anyone else... I'm just teasing you! Sorry you had a bad day yesterday, and I can't imagine a store clerk confronting a customer about dirt that SHOULD HAVE BEEN cleaned up anyway, from shelf OR floor!)

Have you always had Carnation?  Just curious, it used to be the Carnation Dairy in Carnation, WA.  A few years ago they sold out to Nestle.

Well I guess we are the backward ones out here then!!!! My Dad's family (St. Louis) thought that when he moved out here in the late 50's that people roamed with indians (then, native americans now) and lived in log cabins! Seriously!

I make use this recipe, but I use sharp cheddar cheese instead of the cottage cheese.

This gave me an idea, start with canned Cheddar soup as the base, add the broccoli and other ingredients a family might enjoy.  Super easy.

Sounds good..I think it would be like adding cream cheese, only simpler and less expensive. Likely, Elizabeth made her own cottage cheese anyhow!

You are right....Elizabeth made her own...it was a very grainy, small curd kind...I liked it a lot

My kids make their own cottage cheese all of the time!  Just simply take a sippy cup of milk and hide it for a few days... works every time!

EWWWWW, I don't think I want to try that cottage cheese!!!!!! Just doesn't sound safe...........

This is a simple, delicious-sounding recipe!  I have never seen cottage cheese used that way, but it makes sense... I would imagine it sort of melts into the soup and makes it thick and creamy.  You could use low-fat c.c. and make a fairly healthy, cream-free soup!  (I have been watching "Cook Yourself Thin" everyday...can you tell? Wink)
