Another Holiday Favorite Recipe Among the Amish: Homemade Butterscotch Pudding

Pennsylvania Dutch Butterscotch Pudding
1 c. brown sugar
2 tbsp. butter
1 tbsp. flour
1 egg yolk
1 c. milk
1 tsp. vanilla
1/4 tsp. salt

(Best done in a cast iron skillet.) Boil sugar and butter together until soft. Beat the egg yolk well and add it to the flour, milk, vanilla, and salt. Carefully stir a little at a time into the sugar mixture. Cook, stirring constantly, until thick and bubbly

Do you think this recipe could be made with the Splenda Brown Sugar Blend?  Butterscotch is my hubby's favorite but we have to watch our sugar.

You could probably try it. Just remember that the Splenda brown sugar has twice the sweetness of regular brown sugar, so you'd probably have to reduce the brown sugar by one half.

The pie was really, really good.  Hubbie loved it.  Next time I would double the recipe in order to have a deeper pie.  The flavor is great and better than another butterscotch filling that I have used before.  It was also easier to make and I don't have an iron skillet.  You have to watch the bottom of the pan carefully bringing it to a boil because it will burn easily.

I just made this and put it in a pie shell.  My husband's favorite pie is butterscotch and this new recipe looks promising.  Thanks for sharing it.

made this wonderful tasting pie in my cast iron skillet and it was just HEAVENLY to put in my mouth...this is just plain good kevin...yum!!
