Amish Chicken Corn Soup

Today is a cloudy, cool day in Ohio, which means "soup" type weather.  I'm not sure how "Chicken Corn Soup" became such a classic among the Amish, but it has.  Most Amish homemakers have their own version of chicken corn soup that they make. This is Lovina's recipe

2 lbs. cut up chicken
5 cups water
1 med. onion, chopped
2 tbsp. chopped parsley
1/2 cup chopped celery
2 ccuo corn
Salt and pepper
1 cup flour
1 egg, beaten
1/4 cup milk

Simmer chicken in boiling water, remove bones and skin. Strain the stock. Return to pot, add onions, celery and corn. Simmer till vegetables are tender. Mix flour with egg and milk. Rub mixture with fork till it crumbles. Drop crumbs in soup. Cook 10 more minutes covered. Serves 3 to 4.

Yes, it is wet, dreary soup weather.  We are having beef stew tonight and the entire house smells good!  Actually the girls are gone to my parents, so I am hoping for a cozy night with a movie ("Land of the Lost") and some cocoa.  Now if only I had a Snuggie!

Ahhh,Lovina's making rivels!!! That is the German word for rub..the old timers used to rub the crumbs between their fingers into the soup. My grandpa loved them,but now days I think they're sort of forgotten. I make chicken corn chowder, it is very similar to this recipe, but thicker,and often has bacon added.

We add rivels to our potato soup when we make it. It is an old family recipe from my husband's side of the family.

Rivels are kind of like a noodle, I guess you'd say. When I make rivels, I combine a cup and a half of flour with two eggs and mix with a fork, then add it into a pot of potato soup, after the potatoes have cooked. That's double what my MIL puts in hers, as my hubby likes LOTS of noodles in his soup!  Smile  I notice Lovina adds a little milk to hers.
