Fresh blueberry cream pie...

Here's a really good recipe..and I'm sorry to post late season,I've just been too busy "pickin' and cannin"!!! (LOL,not pickin' and grinnin").  1 cup of sour cream, 2 TLSP. flour,3/4 cup sugar,1 tsp. vanilla,1/4 tsp. salt,1 egg. Beat these ingredients together until smooth and slightly thickened(4 or 5 min.). Fold in 2 1/2 cups of blueberries. Pour into an unbaked 9" pie shell and bake at 400* for about a half an hour. Remove from the oven and top with: 3 TBLSP. flour,1 1/2 TBLSP butter, and 3 TBLSP finely chopped nuts..coursley mixed(struesel). Sprinkle on top of pie and bake 10 more minutes(til browned lightly). I know the sour cream sounds odd,but this pie is delicious, and fairly easy!!

Re: Fresh blueberry cream pie...

Barb, I was wondering if you have tried using frozen blueberries? The fresh ones are just a little spendy here but I will use them if I have to.

Thanks

Re: Fresh blueberry cream pie...

I never have used frozen for this particular pie,but I don't see why you couldn't! As with any recipe that uses frozen blueberries,I wouldn't thaw them. It would make too much liquid,I think.

Re: Fresh blueberry cream pie...

Thanks Barb, I am going to give it a try. Will let you know

Re: Fresh blueberry cream pie...

Barb, this sounds delicious, and I'm definitely going to try it -- anything with fruit and sour cream just calls out my name.  "Pickin' and grinnin" ... haven't heard that one in a long while ... ha!  Wink
