Hot Pepper Butter

Melanie, a visitor to this site, requested the recipe for "hot pepper butter." Hot pepper butter, at first consideration, may not sound all that appealing.  Of course, if you like hot peppers, it probably sounds like culinary nirvana.  I'm not a huge fan of hot peppers, but I love the butter version.  It was first introduced to me by Elizabeth Coblentz, Lovina's mother.  The recipe is Amish ingenuity at its finest.  The Amish grow vegetables in large numbers and some homemaker probably realized she had a surplus on her hands.  How to get rid of a ton without wasting?  Hot pepper butter was born.  The name defies its taste.  The butter isn't really that hot.  It's a tangy, delicious spread on sandwiches and, heck, you can use it as a dip for almost anything also.  You can buy a decent commercial version under the label "Dutch Country Kettles." This can be found at most Super Valu grocery stores in the Midwest.  To make your own, try Elizabeth's recipe:HOMEMADE HOT PEPPER BUTTER42 hot peppers1 pint of yellow mustard1 quart of  vinegar6 cups of sugar1 tablespoon of salt1 cup fo flour1 1/2 cups of water Grind hot peppers. Add mustard, vinegar, sugar, and salt and bring to a boil.  Make a paste with flour and water. Add to boiling mixture and cook five minutes.  Pour into pint jars and seal. Makes 7 pints.
