SKILLET CASSEROLE

Simple, one-dish meals are the cornerstone of Amish cooking.  Elizabeth Coblentz, the original Amish Cook, was fond of making a concoction called "One Kettle Soup".  This was a hearty, simple stew of meat, potatoes, and broth.  Very easy, but very filling.  Skillet Casserole is another common supper in the Eicher household, it's easy, nothing fancy, but it IS filling!

SKILLET CASSEROLE

1 pound hamburger, fresh, crumbled

1 diced onion, medium

fresh potatoes, 5 - 6, put through a salad maker (shredded)

2 cups shredded carrots

1 can cream of mushroom soup

Layer all of the above in a skillet. Pour soup over all, then top with a soft cheese.  Simmer from 40 - 50 minutes on low and then serve.

I LOVE skillet casseroles.  My gma used to make one that I loved with hamburger, stewed tomatoes, sliced zucchini, and tons of CHEESE on top.  I finally figured out how to make it, but it will never be as good as hers.

I just made something like this last payday, I boiled up some pasta for it to go over. My husband called it Hamburger Helper!
