Old-Fashioned Peanut Butter Cookies

In my opinion, it's very difficult to beat a perfectly-made homemade chocolate chip cookie.  A close second, though, is a perfectly made homemade peanut butter cookie.  Bland store-bought versions rarely do it for me.  I like the homemade peanutty confections which just scream "Jif" or "Skippy."  Lovina's mother had a delicious peanut butter cookie recipe.  I'm not sure why it is so good since it really is a very basic recipe. Anyway, if you want an awesome cookie, try this:

1 cup shortening

1 1 /2 cups sugar

1 cup peanut butter

2 1 /2 cups all-purpose flour

1 /2 teaspoon salt

1 teaspoon of vanilla

2 eggs

1/2 teaspoon baking soda

Blend shortening, sugar, and peanut butter.  Beat eggs in well. Stir together flour, soda, and salt.  Add to dry ingredients along with vanilla and stir to make a stiff cookie dough.  Drop by teaspoon onto a lightly greased cookie sheet. Criss-cross each drop of dough with a fork.  Bake at 370 for 12 minutes.
