Artichoke plants

Has anyone ever grown and eaten artichokes?  Last year I bought two plants, which did nothing.  I left them alone, lo and behold they started growing in the warmth of the spring.  Now I have two artichokes, one on each plant, but I don't know when I should (have?) picked them.  So now I am watching just to see what they will do, one seems to be opening up.

Yum...I know nothing about growing artichokes, but I know lots about eating them. A local fast-food chain sells an "artichoke sub" and, yum, it is good!
