Homemade Biscuits

When I spend the night at Lovina and Joe's house I don't need an alarm clock.  If one of the eight children in the house don't inadvertently or purposely wake me up, then I'm roused by the smell of freshly baked biscuits rising from the oven. Yum.  I think I need to go there for the night again soon. The best thing about spending the night at the Eichers is the breakfast the next morning!:)  Here is Lovina's recipe for homemde biscuits.


2 cups sifted flour (although we never sift it)
1 tablespoon baking powder
1 teaspoon salt
1/4 cup mayonnaise
1 cup milk
1 teaspoon sugar


Sift flour, baking powder and salt. Add remaining ingredients. Mix until smooth and drop by tablespoonfuls on greased cookie sheet or fill 12 muffin tins 2/3 full. Bake 18 to 20 minutes at 375 degrees.

Yum, just finished our biscuits and gravy using this recipe. Think I will use it everytime I want biscuits.Tongue out

Yea, I think the mayo is what makes this such an interesting recipe.  With having eight children, Lovina likes food that tastes really good (well, who doesn't) but is ultra-quick to "whip up"....her days her so full of laundry, helping kids with homework, home-canning, gardening, packing lunches, making meals, ironing, soothing skinned knees, etc that it doesn't leave time for a lot of elaborate baking....so food has to be quick, but hearty....

Mayo!  An interesting ingredient for biscuits, but this recipe sounds quicker than the buttermilk ones I make, and no rolling/cutting!  Awesome!
