Re: Pumpkin Cookies from the Book

I did add more powdered sugar, the original recipe didn't set up.  So I have a container of icing in the frig, my children think that is just great!  I'll ice them as they are eaten! Our middle daughter who's 9 says, "those are the most delicious cookies ever!"  That sums it up!!  Pumpkin is full of vitamins so I think that it is great that my children will eat it in the cookies!

PS: I bought 3 organic sugar pumpkins that I baked and pureed yesterday.  The yield was 7 cups of pumpkin puree.  I used some today and froze some for later use.  I had one cup left over, I added some cinnamon and sugar, it's in the frig we are going to have it on our toast in the morning.
