Yea, I think the mayo is what makes this such an interesting recipe.  With having eight children, Lovina likes food that tastes really good (well, who doesn't) but is ultra-quick to "whip up"....her days her so full of laundry, helping kids with homework, home-canning, gardening, packing lunches, making meals, ironing, soothing skinned knees, etc that it doesn't leave time for a lot of elaborate baking....so food has to be quick, but hearty....
