CHICKEN SOUP
 
3-4 pound chicken
3 quarts of water
2 teaspoons salt
1 teaspoon peppercorns
1 small onion, chopped
1 bay leaf
1 spring parsley
 
Cut chicken into serving pieces, add to water and bring to a boil. Take off scum as it forms. Allow to simmer for 3 hrs, covered, adding more water as
required. Half hour before serving skim off fat. Add pepper, salt, onion, bay
leaf and parsley.
