Amish Doughnuts

5 cups milk

5 tablespoons yeast

1 1/4 cups shortening

1 1/4 cup sugar

5 teaspoons salt

5 eggs, beaten

17 1/2 cups flour

1 1/4 cups warm water

(You can always choose to "halve" the recipe or reduce it even more if you are only cooking for a few people.)

Scald the milk and let cool slightly. Dissolve yeast in the warm water. Add to milk. Stir in 7 1/2 cups flour. Beat mixture, cover, and let rise in a warm place until double in size. Cream shortening, sugar, salt and eggs. Add to yeast mixtur. Add remaining 10 cups flour. Knead. Let rise until double in size again. Knead. Roll out to 1/4-1/2 inch thick. Cut with cutter. Let rise until double in size. Fry in hot kettle of oil. Roll in sugar.
