Zucchini (or Summer Squash) Jam

For those who have WAY too many zucchini or summer squash.  Even better than using them for taget practice!

3 1/2 cups ground zucchini or summer squash, or a mixture
4 cups sugar
juice of 2 oranges and 1 lemon
ground rind of 1/2 orange

Place eveything except the lemon juice in a bowl and refigerate overnight.  Next morning, add lemon juice, bring to a boil and cook about 15 minutes.  Process in water bath canner for 10 minutes.
