RECIPE of the WEEK

Thanksgiving at the Coblentzes is a time of family and fellowship.The same scene unfolds in households across America. This Thursday, their table will groan under the weight of a stuffed turkey, homemade dressing, sweet potatoes, cranberries, homemade whipped mashed potatoes, and plenty of pie.
This will be a tougher time for Elizabeth than past holidays with the absence of her recently-deceased beloved husband, Ben. But, on my last visit to the Coblentzes, November 17, Elizabeth and her family all seemed in good spirits and ready to enjoy Thanksgiving as a family. SWEET POTATO CASSEROLE FOR THANKSGIVING

6 red sweet potatoes
1 cup sugar
3 eggs
1/4 cup of butter
1 cup of milk
1 cup of raisins
1 teaspoon of cinnamon
mini-marshmallows

Boil potatoes until tender. Drain. Mash until creamy. Add eggs, butter, milk, cinnamon, raisins, and nuts. Pour into baking dish and place marshmallows on top. Bake 30 minutes at 350. Serve hot.
