Elizabeth's garden is a bountiful harvest each autumn of squash, gourds, muskmelon, and, occasionally, pumpkins. This year, Elizabeth didn't grow any pumpkins. But usually her daughters grow some in their gardens also, so there has been no shortage of fresh pumpkin among the Coblentzes this fall. The Amish use pumpkins for much more than carving jack-o-lanterns, pumpkin is considered a delicacy, with the pulpy inside being used in pies, cookies, and breads. Pumpkin bars are also a favorite. PUMPKIN BARS

2 cups of flour
1 cup of walnuts
2 teaspoons of baking powder
2 cups of fresh pumpkin
1/2 teaspoon of salt
2 teaspoons of cinnamon
2 cups of sugar
4 eggs
1 cup of oil

Mix all of the above ingredients very well. Shape into bars. Put on a large cookie sheet that has been greased and floured. Bake at 350 for 25-30 minutes. Ice with cream cheese icing...

CREAM CHEESE ICING

1/2 stick of oleo
1 box of powdered sugar
8 ounces of cream cheese
1 teaspoon of vanilla

Mix very well. Ice bars after they cool.
