RECIPE of the WEEK

Last week was hashed browned potatoes, this week is Elizabeth's mouth-melting potato casserole. True to Amish customs, this dish is elegant, yet simple.

HOMEMADE POTATO CASSEROLE

2 pounds of sliced potatoes
1/2 cup melted butter
1 teaspoon salt
1/2 cup chopped onion
1 can cream of chicken soup
2 cups grated cheese
2 cups sour cream
1 package of crushed crackers

Mix all of the above ingredients well, except for the cracked crumbs and place in a 2-quart casserole. Sprinkle cracked crumbs on top. Bake in 350 degree oven for 45 minutes.
