ZUCCHINI SQUASH BREAD

3 eggs
1 cup cooking oil
2 cups sugar
2 cups peeled and grated zucchini
3 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon soda
3 teaspoons cinnamon
1/2 teaspoon baking powder
1/2 cup chopped nuts

Directions : Beat eggs until foamy : add oil, sugar, zucchini and vanilla. Mix lightly, but well. Add flour, salt, soda, cinnamon and baking powder. Mix together. Divide batter into two greased loaf pans. Bake at 325 for 1 hour or until toothpick comes out clean. Yummy!
