RECIPE of the WEEK

June 4, 2001

SUMMER FRUIT DISHES AND BEVERAGES

The Amish are like anyone else. They enjoy a cold, frosty mug of lemonade or store-bought punch on a warm, humid summer day. Amish cooks are sometimes creative in the recipes they whip up from grocery store ingredients. This is especially true with some of the cool concoctions that the Coblentzes enjoy drinking. The next few weeks will feature some cool, fruity beverages and a recipe for homemade root beer. Also, some light, delicious chilled fruit snacks perfect for the dog days of July and August will appear in the coming weeks.

SUSAN'S FROZEN FRUIT SALAD

1 large container of Cool Whip
1 can of Eagle Brand sweetened condensed milk
1 large can of crushed pineapples
2 small cans of mandarin oranges
1 can of cherry pie filling
2 cups of mini-marshmallows

Mix all ingredients together in a large bowl. Pour into a 9X13 pan and freeze. Thaw slightly before serving.
