Summer is full of birthdays on the Coblentz farmstead. Elizabeths birthday is in July, as is her daughter Emmas. Many other birthdays fall during the summer months, and a good, light cake tastes good during the hot days. This chocolate cake is a favorite in the Amish Cooks home.

RED DEVIL'S FOOD CAKE

2 cups of sifted cake flour
1/2 cup of milk
1/2 cup of shortening
2 teaspoons of baking soda in milk
1 1/2 cups of sugar
1 cup of boiling water
1/3 cup of cocoa
1 teaspoon of vanilla
2 eggs

Cream the shortening and then add sugar, cocoa, eggs, and beat well. Add flour and, after that, the baking soda. Add boiling water and vanilla. Rub butter or lard into a cake pan and pour in the batter. Bake for 30 minutes at 350.
