RECIPE of the WEEK

Salads are a summer staple on Amish menus. Usually light, and easy to prepare, they make a nice change of pace from the heavier meat and potatoes meals of the colder months. The next several weeks will feature some favorite salad recipes from the Coblentz kitchen.

CRYSTAL SALAD

1 package of lemon juice
1/2 cup of diced apples, with peelings
1 1/4 cup of water
1/2 cup of diced pineapples
1/2 cup of pineapple juice
1/2 cup diced celery
1/2 cup of whipped cream
6 marshmallows (cut-fine)
1/2 cup of your favorite salad dressing

Dissolve the lemon gelatin in hot water. Add pineapple juice. Let set all the way. Fold in whipped cream, salad dressing, apple, pineapple,celery, and marshmallows (colored marshmallows make the salad more attractive).Serves 8-10 people.
