RECIPE of the WEEK

Cookies are a common dessert in our household, and probably in yours too. They go so good with a cup of coffee on a cold winter's morning, or as a snack for the kids after school. Your family probably has a favorite cookie recipe. Several readers have written as to ask me what our favorite cookie recipes are. Following in the next few weeks are some of our favorites - you may have missed them if they have run with this column before.

RANGER COOKIES

1 cup of brown sugar
1/2 teaspoon of baking soda
1 cup of sugar
1 teaspoon of baking powder
1 cup of lard
2 cups of flour
2 eggs
2 cups of Rice Krispies
1 tablespoon of vanilla
2 cups of rolled oats
1/2 teaspoon of salt

Cream first three ingredients. Add beaten eggs and vanilla. Mix thoroughly. Add sifted dry ingredients. Stir in cereal. Roll batter into walnut sized balls or drop scant tablespoon on ungreased cookie sheet. Bake 10 minutes at 400. Makes 5 to 6 dozen, a crunchy cookie.
