RECIPE of the WEEK

RICE DINNER

1 cup raw rice
1 cup diced cooked chicken
1 cup chopped onion
salt and pepper
1 pound fresh, bulk pork sausage
1 soup can full of water
1 can condensed cream of mushroom soup
1 cup chopped celery

YIELD : 6 servings
PREP TIME : 20 minutes
BAKING TIME : 2 hours

In a large, ovenproof skillet or casserole, brown crumbled sausage,rice, and onion. Drain as necessary. Add the mushroom soup, celery, chicken, salt, pepper, and water. Cover and bake about an hour at 300-325 degrees. If you don't brown the ingredients first (be sure to use lean sausage if you don't), the baking time should be increased to two hours. If baking the full time, don't place pan too near oven heating coil and watch for overbrowning.
