RECIPE of the WEEK

No holiday is complete without peanut brittle. This crunchy candy is a favorite around here. My mother used to make it when I was a little girl and store it in tin containers. All the grandchildren would love to come over and eat her homemade peanut brittle. - Elizabeth Coblentz

PEANUT BRITTLE

2 cups of sugar
2 cups of salted peanuts
1 cup of honey
1 tablespoon of butter
1 cup of water

Put sugar, honey, and water into a saucepan. Stir until sugar is dissolved. Cook to 285. Remove from fire or heat. Add butter and peanuts. Stir just enough to mix thoroughly. Pour into very thin sheets of well-greased platter and cool. Break into pieces to serve.
