RECIPE of the WEEK

SKILLET CASSEROLE

1 pound lean ground beef
1 large onion, diced
Fresh potatoes, peeled and diced
Sliced fresh carrots
1 can of condensed cream of mushroom soup
Additional liquid, as needed
 (water or milk, milk makes a richer casserole)
Shredded Cheddar, colby, or Swiss cheese for top
YIELD: at least six servings
PREP TIME: 1 hour

Brown hamburger in a large, heavy skillet (with tight-fitting lid). Drain meat well and top with onion, potatoes, and carrots. Put mushroom soup over all, then top with a soft cheese.

Cover and simmer for 40 to 50 minutes (Check occasionally and add water or milk, as needed). Serve hot.
