Vanceburg, Kentucky: Amish Oatmeal

Western Kentucky has been experiencing tremendous growth in its Amish population over the past 20 years, but the growth has now been seen across the Bluegrass State including in parts of the state where the Amish presence has been minimal.  One of the newer communities is located in the hilly expanses outside Vanceburg where 18 Amish families now call the area home.  This comfort food classic comes to us from that settlement.  If anyone has been to the Vanceburg community, let us know!

HOMEMADE AMISH OATMEAL

1-1/2 cups quick cooking oats

1/2 cup sugar

1/2 cup  milk

1/4 cup butter, melted

1 egg

1 teaspoon baking powder

3/4 teaspoon salt

1 teaspoon vanilla extract

Warm milk

Fresh fruit and/or brown sugar, optional

Combine the first eight ingredients; mix well. Spread evenly in a greased 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until edges are golden brown. Immediately spoon into bowls; add milk. Top with fruit and/or brown sugar if desired. Yield: 6 servings

    sounds good…….
    we don’t use sugar of any type…..
    or salt…
    just cinnamon and little splenda……fruit on the side.
    also dry………no liquids added after cooking.
    my husband makes oatmeal on the weekends, sometimes
    pancakes….
    I have to admit this oatmeal recipe sounds great!

    I suspect there is an error in this recipe. Baking this amount of oatmeal at this temperature in this size pan for the stated time could make for a hard, burned product. I tried this recipe using a much smaller pan and a shorter baking time, and had good results.
