Wow, this recipe makes my mouth water. This recipe is from the Amish Cook archives and I may just have to barter some fresh rhubarb off Lovina next time I visit so I can make these myself. Wow, these sound good!  This is a recipe from her mother’s recipe file.  The rhubarb is coming up fast and furious now, producing generous stalks like in this photo.

 

 

RHUBARB BARS

  • 4 eggs, beaten
  • 1 cup oil
  • 2 cups. sugar
  • 1 cups cooked rhubarb
  • 1 teaspoons. baking powder
  • 2 cup. flour
  • 2 teaspoons. cinnamon
  • 1/2 teaspoons. salt
  • 1 teaspoon soda

Mix in order given. Put in jelly roll pan or two 9 x 13 pans. Bake 25-30 minutes at 350 degrees.

FROSTING:

1 (3 oz.) pkg. cream cheese

6 tbsp. butter

2 c. powdered sugar
1 tsp. vanilla

Put frosting on bars while still warm. Rhubarb bars ready
