Wow, this recipe makes my mouth water. This recipe is from the Amish Cook archives and I may just have to barter some fresh rhubarb off Lovina next time I visit so I can make these myself. Wow, these sound good! This is a recipe from her mother’s recipe file.
The rhubarb is coming up fast and furious now, producing generous stalks like in this photo.
RHUBARB BARS
- 4 eggs, beaten
- 1 cup oil
- 2 cups. sugar
- 1 cups cooked rhubarb
- 1 teaspoons. baking powder
- 2 cup. flour
- 2 teaspoons. cinnamon
- 1/2 teaspoons. salt
- 1 teaspoon soda
Mix in order given. Put in jelly roll pan or two 9 x 13 pans. Bake 25-30 minutes at 350 degrees.
FROSTING:
1 (3 oz.) pkg. cream cheese
6 tbsp. butter
2 c. powdered sugar
1 tsp. vanilla
1 tsp. vanilla
Put frosting on bars while still warm. Rhubarb bars ready




I need to make these for my husband. I can’t stand rhubarb, but he loves it. It’ll make a nice surprise for him.
