I found an old recipe in my files from Elizabeth Coblentz, Lovina's Mom. Had I found it about two weeks ago, I might have put it into Lovina's baking book. But, oh well, I can share it here. Sounds interesting, it is for "whole wheat batter bread."
1 package dry, active yeast (Elizabeth always used "Red Star")
1 1 /4 cups warm water
2 tablespoons honey or brown sugar
2 cups white flour
1 cup whole wheat flour, unsifted
2 teaspoons salt
1 tablespoons shortening, soft
Dissolve yeast in the warm water. Add honey, half the white flour, salt, and shortening. Mix vigorously. Blend in remaining flours with a spoon. Cover and let rise in a warm place until doubled in size, about 30 minutes. Stir the batter down and spread it evenly in a greased 9 X 5 loaf pan. Let rise in a warm place until the batter reaches 1 /2 inch from the top of the pan, abou 40 minutres. Bake at 375 for 45 minutes. Brush with shortening. Makes 1 loaf.

Re: Whole Wheat Batter Bread....
This bread is excellent if you make it correctly! However, the last time I must have made the water a bit too warm as the bread didn't rise like it should have (the yeast was good) and the loaf turned out small and very dense. I was disappointed, but I will make it again sometime, as that is the first time I ever goofed this one up! Got to remember NOT to kill the yeast, LOL
Re: Whole Wheat Batter Bread....
Always remember..yeast is a living organism. It is easily "killed" by high heat. A rule of "thumb"..no hotter than you can hold your "thumb" in!! My wise grandma taught me that many years ago. I have made bread for years and have had some failed attempts. But, I have found that if I follow her advice,I usually have success! Just thought I'd share..some posts get me to thinking on such things in my life...
Re: Whole Wheat Batter Bread....
Thanks for the tips, Barb and Pam! I do use tap water, just never sure how hot - or cool to make it! Thankfully, I have not had many failed attempts!
Re: Whole Wheat Batter Bread....
I've had that happen before too. I now just use warm water straight from the tap. If it's a little on the cool side, the worst thing that happens is my bread takes a little longer to rise, but at least I still end up with an edible loaf of bread and not a giant piece of hard tack. lol

Re: Whole Wheat Batter Bread....
I made this bread today and it came out wonderful! I followed the suggestions checked the bread after 25 min. The loaf was nicely browned and sounded hollow when thumped. The 25 min baking time does seem to be an accurate time for this recipe. I will definitely make this bread again. It's a nice quick and easy bread recipe!

I made this bread today. It will definitely be made again at my house . Yummy!!!!!! I followed the suggestions by others on this site.I only baked it 25 minutes and it had a nice golden color and was done. linda
Re: Whole Wheat Batter Bread....
Hey, Linda, glad the bread turned out for you.....You didn't by any chance take any photos of the bread that you could share?
Re: Whole Wheat Batter Bread....
no! I am not a picture taker. Sorry! . The only camera I have is a disposable . How sad! someone needs to take a picture of this bread . I toasted a piece this morning in the toaster and man was I in heaven!
Re: Whole Wheat Batter Bread....
Yum...you've made me hungry...and all I have in the house is a loaf stale store bought bread..blech...
Re: Whole Wheat Batter Bread....
Ok. First rise took an hour instead of the 30 the recipe said. The 40 minute second rise was right on. Bake time came out to 25 minutes for me as well. I cannot imagine just how burnt the bread would have been had it been in there for 45 minutes.
By the way it was FANTASTIC!! All of us enjoyed it and the loaf is almost completely gone.
Re: Whole Wheat Batter Bread....
I am making this bread right now. I agree that it's more of a wet dough than a batter. I will also be following the suggestion about baking it for 25 minutes. I'll check on it then and decide whether it needs to come out or not.
I'm not done with it yet so I'll have to report back later.
Re: Whole Wheat Batter Bread....
I'm going to bake this bread also. First I'll go to Costco the yeast. Thanks for mentioning that the Red Star yeast can be purchased there for only $4.00!
Re: Whole Wheat Batter Bread....
That is at a Costco Business Center. I don't know that regular Costco carries it in bulk. Sorry I should have specified.
Re: Whole Wheat Batter Bread....
Awesome, yummy bread! The loaf came out just as we were setting the table for dinner and was sent straight to the table for testing!
Only a couple of comments on the recipe... First, what I got was more a normal bread dough, not the "batter" I was expecting. Can't see that I did anything wrong or left out any of the wet stuff...I even used honey rather than the brown sugar. LOL I ended up having to give it a bit of kneading after the first rise, rather than the "stir down" the recipe calls for. Second, the bake time says 45 minutes, but mine was done after about 25 - definitely wouldn't let it go past 30 minutes at 375.
The result though, as I said, was a terrific crusty-on-the-outside-melt-in-your-mouth-soft-on-the-inside bread! I'll definitely make it again.

Re: Whole Wheat Batter Bread....
I've GOT to try this!! Sounds yummy!
Re: Whole Wheat Batter Bread....
I use Red Star too, I can buy a bigger bag at Costco for about $4; otherwise homemade bread would not be affordable.

KJ - if you have a GFS (Gordon Food Supply) in your area, you can get a one pound package of SAF instant yeast for just about $2.00. ~ Angel

You know I'll be trying this one today.
