Okay, well, I found this recipe in my old files. It's undated and it's actually in one of Elizabeth's daughter's handwriting. I'm not sure whether this was from an old column and I just never used the recipe or whether its from a cookbook we had planned and one of the daughters just wrote the recipe out for her mother (she would do that sometimes). I'm not sure if these sound good or not. I'm a so-so fan of no-bake cookies. Anyone want to try them?
UNBAKED CARAMEL COOKIES
2 cups sugar
3 /4 cup butter
1 6 oz can of evaporated milk
1 4 oz dry package of butterscotch pudding (not instant)
3 1 /2 cups quick cooking oatmeal
Combine sugar and butter and milk in a saucepan. Bring to a boil, stirring all the while. Remove frm heat and add pudding mix dry from the package. Add oatmeal and cool for 15 minutes. Drop by spoonful onto waxed paper. Makes about 5 dozen

I live at an altitude of over 7,000 ft. so I have to adapt a lot of recipes. I made the Unbaked Caramel cookies this way and they sat up and saluted and my husband is glad I went to this web site.
UnBaked Caramel Cookies
1 3/4 cups sugar
1/2 cup butter
2 tbs. light corn syrup
3/4 cup evaporated milk
1 small (4 oz.) package of butterscotch pudding (not instant)
3 1/2 cups oatmeal
1/2 cup toasted wheat germ (optional)
1/2 to 3/4 cup dry roasted peanuts
Combine sugar, corn syrup, butter and milk in a saucepan. Bring to a boil stirring constantly and boil for 4 minutes. Continue stirring. Remove from heat. Add pudding mix and then add the oatmeal and wheat germ & peanuts. Let sit and cool for about 15 minutes. Drop by spoonfuls onto waxed paper and let cool and set for about an hour.

I just made these to take to my son's tomorrow and they didn't harden. They are cold just laying in a puddle of grease. Any ideas of what I might have done wrong? Maybe 3/4 cups of butter was too much?

I'm sorry to have taken so long to thank you both for your help. My 2 year old granddaughter poured a bottle of water on my keyboard and I had to let it dry out. The no bake cocoa cookies I've made for 40 years say to boil for 2 min with 1/4cup of butter so I don't think I'll try this again even though it tasted pretty good. Thanks again...

I think so about the butter, most no-bakes only use 1/2 cup of butter. That is always upsetting (to me) when a recipe fails and I have wasted ingredients. Better luck next time! Also, another thought..maybe they didn't cook long enough. I think that 2 minutes is the boiling time for no-bakes.

My No Bakes, (the chocolate, peanut butter,oatmeal) boils for four minutes. Also half cup butter.

this sounds really GOOD. Don't have time to try it until after this weekend, but will definitely try it next week and let you know how they turn out. I made some chocolate no bakes 2 weeks ago, but didn't use my usual recipe...did not harden. Had to eat them with a spoon...but they all disappeared anyway

The recipe I used does not call for the pudding...but I think if I had used this one with the pudding it may have gotten a whole lot firmer...going to try this tomorrow...We are home from the trip, my kiddos have gone back to Atlanta and the laundry is done.

I think I make the same chocolate recipe you are talking about. Have found that the humidity in the air has something to do with them not setting up, similar to making fudge...
