Amish homemakers have traditionally been very inventive, creative cooks fashioning a complete meal out of the most basic ingredients. This stems from their long history of self-sufficiency and not wanting to be dependent on others for their meals. So when times get tough economically, the Amish are better equipped to "hunker down" and wait it out. So from time to time until this economic turmoil mercifully ends, and it will end, I'll be sharing some favorite "recession recipes." This first one came from Lovina's Mom and was once quite common among the Amish. It's called "pot pie soup."
POT PIE SOUP
2 cups flour
1 /2 teaspoon salt
1 egg
water
broth
3 diced potatoes
Crack the egg yolk and white into a cup and fill the cup halfway with water. Stir and pour into a bowl. Then add flour and salt and knead until a pie dough consistency forms. Roll out thin and cut the dough into 1-inch by 1-inch squares. In a kettle put sausage or ham broth (vegetable, chicken or beef broth can also be used) and bring to a boil. Then drop in the squares of rolled out dough. Add diced potatoes and heat on medium until potatoes are tender. Serve warm.

This is what we call Slippey Pot Pie. Here in the Western Maryland region ( Mid Atlantic States), we either use smoked ham hocks or chicken to make a broth, use potatoes and most also use 2-3 carrots sliced in the broth, and then drop the squares into the broth. Churches, Civic groups and Fire halls all have Dinners to raise money by having Pot Pie Dinners. It's a very old classic " peasant" food here. I grew up on it. We've made pidgeon and squirrel potpie also.

This is one of my all-time favorite meals! My grandmother and mother used to make this from beef stock. They'd add celery and just a touch of onion. My grandmother called it what sounded like "Bott Bye". My mom called it "Bott Pie" or "Pot Pie". I later learned somewhere on the internet it is "Bott Boi" in Pennsylvania Dutch. My grandparents were 100% German but I don't know of any PA Dutch ties.
I remember as a kid asking a friend if he ever had "Bott Pie", he said "Yes, but he likes fresh baked pie better".
I then said "pot pie" but he equated it with the chicken pot pie we are all familiar with. Took a while to explain.

Wow, thank you, Bill, for this post! I'm looking forward to telling this to Lovina. This happens frequently where a word will garbled in translation. "Pot Pie" never made much sense to me because there's nothing really in the soup that resembles that...
