Finding a really good peanut butter cookie recipe can sometimes be as difficult as choosing which kind of peanut butter to buy (Jif? Skippy? Store-brand? Chunky? Creamy? Natural? SIGH). But going waaaay back in the Amish Cook archives – to 1995 to be exact – we can share a really tasty, easy peanut butter cookie recipe. This first appeared in the Amish Cook column when Elizabeth Coblentz was writing it and I have made and consumed these cookies. Easy to make and this cookie has a really strong burst of peanut flavor buried in a soft cookie. Try them, I don’t think you’ll be disappointed!
EASY PEANUT BUTTER COOKIES
4 tbsp butter
1/2 c brown sugar
1/2 c white sugar
1 egg
1 c flour
1 tsp baking soda
1/2 c peanut butter
Cream butter and sugars together. Add egg and mix lightly. Sift flour and baking soda together. Add to butter/sugar mixture and mix well. Add peanut butter and mis well. Roll into small balls. Place on cookie sheet and form criss-cross pattern with fork. Bake at 350 for 10-12 minutes.




That is like my mother’s recipe. My husband would love these.
I make peanut butter cookies all the time and use a meat pounder to flatten them. My sister used a meat pounder many years ago in 4-H to make very original marks on top of the cookies (and they went to the Indiana State Fair). My children and grandchildren (including the boys) love making the marks with the “pounder”!

The PNW is expecting a lot of snow tonight and tomorrow with school most likely out. This will mean spending time baking these cookies with my young granddaughter. She likes to bake cookies.
Question: I got a recipe from our weekly newspaper called Fudge-Topped Brownies. It was put in by The Amish cook, in Middletown, Ohio. Her first name is Lovina.
The recipe calls for two cups of sugar and one cup of flour.
I wondered if it was printed wrong, and should be one cup of sugar and two cups of flour. If you can help me I would really appreciate it. Thank you, Linda Ruthrauff

Hi Linda, I have a recipe for brownies that is very similar. It calls for 2 1/4 cups of sugar and 1 1/3 cups of flour in it. I’ve made them for years and they always turn out right so I imagine your recipe is correct. Try them and I’m sure you’ll be pleasantly surprised.
