Butternut Squash Soup

KJuneBug's picture

My family went nut-so last night over the Creamy Butternut Squash Soup I made for them with the leftovers from the night before!! It had been steamed in the oven with salt and brown sugar.

I looked up a recipe online, and right away found a Paula Deen, (you just gotta love this great Southern lady!!) recipe. Just type in Creamy Butternut Squash Soup, into your browser to find the recipe.  For me a great springboard, I have this serious problem of never following a recipe as written, I am always adding, subtracting or substituting ingredients.

I highly recommend making this seasonal soup to warm up and nurish the family on a chilly Autumn eve.  The basic ingredients are roasted butternut squash, carrots, onions, chicken broth and cream.  I added tomatoes, took out the onion and chicken stock, substituting a package of the seasonings from a package of chicken ramen noodles.  Important to remember is to puree the hot mixture and whisking in the cream just before serving.  Some garnished with sour cream and avacado, or parmesian cheese.

I also made biscuits as a side item, (in an uncharacteristic manner, I ruined them and burned two finger tips and my thumbFrown ) my family ate them anyway, I was offened and refused to eat one since it burnt me!!  Anyway a good buttermilk biscuit pares nicely!

Enjoy the bounty of this season!!
