Homemade Mashed Potato Cake

This is a really interesting recipe that comes to me from an Amish woman in Holmes County, Ohio! Using up leftover mashed potatoes is not unusual for an Amish homemaker.  The most common way to use them is to simply fry them up as patties the next day. If there are leftover veggies from supper the night before, they’ll often mix those into the patty and have sort of an ‘everything-in-one’ patty.  But using leftover mashed potatoes in a cake??  That’s a new one on me. So if you want an inventive way to use mashed potatoes, give this recipe a try…oh, and if you try it let us know how it turns out!

MASHED POTATO CAKE

1 cup margarine, softened

2 cups sugar

2 eggs

1 teaspoon vanilla

1 cup cold, leftover mashed potatoes

2 cups flour

1 /4 cup cocoa

1 teaspoon baking soda

1 cup milk

Cream together margarine and sugar.  Add eggs, one at a time. Blend in vanilla and potatoes. Combine flour, cocoa, and soda.  Add to creamed mixture alternately with the milk.  Pour into a greased 13 X 9 X 2 inch pan.  Bake at 350 for 35-40 minutes or until done.

    I make a mash potato cake similar to this one. In mine I use eggs,flour,and green onions. I am going to have to try this one.

    I have a recipe for yeast dinner rolls that includes leftover mashed potatoes. Trouble was we hardly ever had mashed potatoes left over.

    Oddly enough I had saved a bunch of mashed potatoes on Sunday and when I got up Monday morning my husband had thrown them out while cleaning up the kitchen!!! I was saving them to make potatoe patties….I so would have made this cake! My mom and aunt make a donut that contains mashed potatoes.
    Next time I make mashed potatoes I will definitely be making enought to try this cake!!!

    I have made donuts with my MIL using mashed potatoes and they were yummy, so I would imagine this cake would be good too.

    My mother had a mint candy recipe that called for mashed potatoes. We usually had them at Christmas time.

          Peppermint Patties

          • 1/2 cup warm mashed potatoes (mashed with milk only)
          • 1 tablespoon shortening
          • 3 1/2 cups powdered sugar
          • 7 drops peppermint extract
          • dark sweet chocolate, melted

          Beat first 4 ingredients until smooth. Add additional powdered sugar if needed to reach desired consistency.
          Shape into patties and freeze. Coat patties with melted chocolate while frozen.
          Note: This recipe won a first-place ribbon at the Malheur County Fair in Ontario, Oregon. It also won the grand prize in the candy division.

  7. i have used mashed potatoes in yeast breads lots of times. they turn out real light with potatoes in Iris Copenhaver
