I was going through some papers in my office today (of which they are way too many…papers, not offices) and found a note from my Amish friend in the settlement of Inola, Oklahoma. I had read the note a month or so ago but inadvertently overlooked a recipe she included to share with all of you. Oklahoma is barbecue country and the Amish there definitely get it on the sweet/tangy delicacy. This sounds like a good recipe, although it is very sparse on instructions. I am typing it in below just as she wrote it, so you may have to experiment with the particulars of the instructions!
AMISH B-B-Q SAUCE
4 cups catsup
dash Worchestershire sauce
1 teaspoon soy sauce
2 teaspoons dry mustard
2 cups brown sugar
2 cups vinegar
2 teaspoons ginger
2 teaspoons chili powder
1 /2 cup chopped onion
2 cups sugar
1 can tomato sauce
Mix all together.




4 cups of sugar (2 brown, 2 white)? Plus all the sugar that is in the ketchup? Holy cow that would be some sweet ‘barbecue’ sauce.
Yep, it would be sweet all right – there would also be a lot of it, about 2 quarts worth.
I think you’d want to put this in a saucepan and heat/stir it until the sugars dissolve.
