Here's a good pickled egg recipe. I made these yesterday..the recipe didn't originate with me,it came from a man that hubby used to work with. He has since passed away,but his recipes never will! 2 doz. hard boiled eggs, 1 qt.(or 2 cans) small beets(undrained),1 pint vinegar, 1 cup sugar, 1/2 tsp. salt, 1 sliced onion. Peel eggs. Place 1 doz. in a gallon jar. Add half of the beets,then add half of the onion. Continue with the rest of the eggs,beets and onion. In a saucepan, mix the vinegar,sugar,and salt. Bring to a boil. Pour it over the jarred ingredients. Cover loosely,and allow to set a couple of days at room temp. After that,you may refrigerate and enjoy!

That sounds great! I'll try it. Usually I'll buy a jar of polish sausage and when it's empty I'll just fill it back up with hard boiled eggs. Yours sounds so much better.
