Ingredients
1 pkg chicken tenderloins or chicken breasts that have been sliced in half & pounded flat
2T olive oil
2 cloves garlic, minced
1 small onion or 2 shallots, minced
Italian seasoning
Ground Rosemary
Salt & Pepper to taste
1/4 cup white wine
1/4 cup water
1 T butter
1T cornstarch
Season chicken liberally on both sides with italian seasoning, rosemary, salt & pepper.
saute garlic & onion/shallots in olive oil until translucent. Add chicken, and saute until just done. Remove from pan.
Melt butter, add cornstarch and let brown slightly. Add 1/4 water and wine, stir until thickened. Put the chicken back into the sauce.
Serve over rice or mashed taters.
