Does anyone have a recipe for baked lemon cheesecake? I can find all kinds of the ones that aren't baked. I am a hospice nurse, and one of my patients, a little 96 year old lady, would like to have one, and I'd like to make it for her.

Baked Lemon Cheesecake
2 3/4 C. graham cracker crumbs
1 C. butter, melted
Mix and put into lightly greased (or "Pammed") 9" springform pan. Press evenly over bottom and sides, and then refrigerate for apx. an hour.
3 - 8 oz. Pkgs cream cheese, room temp
3 eggs
1/2 C. granulated sugar
Beat eggs and sugar together until pale and thick, this may take 5-10 minutes.
Add cream cheese and mix until smooth and creamy.
3 tsp. grated lemon rind
1/4 C. lemon juice
Add rind and juice to filling mix and mix until smooth. Pour into the pan, and distribute evenly. Bake in a pre-heated 350 degree oven for 45 minutes. Turn off oven, and allow cheesecake to cool in oven with door ajar. Do not remove until completely cool. Refrigerate for several hours or overnight. This makes 8-10 servings. It can be served with a dollop of whipped cream or fresh strawberries or both.
