I will relate this post to the Amish. This is the Fourth of July weekend. With it falling on a Saturday, I'm not sure as many people are getting the long weekends out of it. But the Amish are no different than the rest of us. Give them a long weekend off from work and they'll pack it with fun. Camping, fishing, boating, these are all outdoor pursuits that are pretty low-tech and therefore popular among the plain people. Pitching a tent and sleeping under the stars is a favorite among the Amish, especially those with children. The weekend will not be spent wrapped in outward displays of patriotic fervor, that's just not the Amish way, but this doesn't mean they aren't deeply appreciative of the religious freedom this country gives them. Some people mistake their low-key ways with lack of patriotism. This is not the case.
I'll be pitching tent for a couple of nights this weekend with Rachel and my sister-in-law and brother-in-law. We're just going to have a relaxing "tech-free" weekend: campfire food, lots of books to read, hiking, and my SIL has forbidden me to use my cell phone or email during that time. So, to help pass time, we'll eat. We're going to ditch the diet for a day or two. Does anyone have any good, easy, fun campfire snack recipes to share?

I don't get all fancy like these - I just use cans to cook in - veggies, beans, etc. (can opener required!), grill dogs or burgers & wrap corn on the cob in foil & bake it. My idea of camping includes me not doing a lot of work just like everyone else! lol

I just remembered, my trusty little recipe booklet from Jiffy Mix has an entire section devoted to Camping Recipes! A little late now, but request this free booklet... it has lots of good recipes. I have used mine for years! http://www.jiffymix.com/index.php/order-our-recipe-book/
These recipes are good because they call for few ingredients... and Jiffy mixes are really cheap!
Here are a few of the better camping recipes:
Kamper Kakes
(Eight 4 inch pancakes)
1 pkg Jiffy blueberry, apple-cinnamon or Raspberry muffin mix
1/2 cup water
1 egg
Mix all ingredients together well and bake on preheated griddle, lightly greased. Turn pancakes when bubbles appear and edges begin to dry. Serve warm with your fav. topping.
Canoes *This one sounds GOOD*
(10 canoes)
2 1/2 cups Jiffy baking mix
2/3 cup water
1 package hotdogs
Mix baking mix and water together to form a dough. On a piece of aluminum foil, pat dough into an 11 x 15 inch rectangular shape, about 1/4 inch thick. Cut strips of dough about 3 x 5 1/2 inches and wrap lengthwise around each hotdog. Pinch the ends together. Leave top open for condiments. Bake over moderate heat until golden brown.
Fruit Cobbler
For each serving, use a square of aluminum foil. Place favorite fruit (peach, apple, pear, or apricot), cored and sliced, in center of foil. Sprinkle with sugar and 2 Tbsp Jiffy baking mix. Bring two ends of foil over cobbler and double fold to make a tight seal. Bake on hot coals about 15 minutes. Remove from coals and serve warm.
Sweet Breakfast Buttons
(25-30 servings)
2 cups Jiffy mix
2/3 cup water
Mix ingredients together well to form a dough. Roll dough into balls half the size of walnuts. Fry in skillet with about an inch of oil. Drain on paper towls and roll in cinnamon-sugar mixture.

On the potato packets that M Weisgerber suggested, you can also add a sliced onion to it. That's how we make 'em, and they're delicious. We make them on the grill and they are ready in 20 min. Have fun Kevin! I know you will!

I made potato packets with my BBQ tonight! Diced potato, sliced onion, butter and "season-it-all." Yum, yum.

A couple of relatively heathy sides for your burgers, chicken, steaks...
Potato Packet: large-dice 1 potato per person and put all potatoes on a long sheet of aluminum foil, season with salt and pepper, liberally drizzle with olive oil, gather up ends of foil and make a packet, wrap packet with another piece of foil, cook over coals for 45 minutes or until you start to smell them
Broccoli and Cauliflower Packet: same as above only use broccoli and cauliflower, cook for 35 minutes over coals

We do pizzas with a camp-pie iron. Use 2 slices of bread, some sauce, pepperoni, and cheese. Just close it up and put in the fire!! I also do fruit pies the same way. Another good campfire idea is Cowboy beans. In a dutchoven over your fire, brown some hamburger with peppers and onions. Add a couple cans of pork and beans, and dump some ketchup in it . Just let it simmer along. You can also slice some hotdogs or keilbassa into it if you choose. We like it, and it's easy. (you should stir it once in a while,so it doesn't stick!). Have fun!! I take it you won't be anywhere near a pizza delivery? or be able to ride your bike in to town and McDonalds? What books you taking to read?
Well if you get craving for something sweet you can try this:
Pineapple upside down cake camping style:
12 pack of Plain cake donuts
1 or 2 cans of Pineapple slices
Butter
Brown Sugar
Aluminiun foil
Got all that, OK
now take a square of foil big enough to wrap one or two donuts in. Cut a the donut in half like a bagel, put a pineapple slice on one half, a little butter here and there on top and sprinkle with brown sugar, put the other half on top and wrap tightly in foil. Lay on top of coals for about 10 to 15 minutes. Open carefully cause it hot! LOL
Will taste just like pineapple upsidedown cake....

A favorite thing to do when we go camping is the foil meal. Use stew meat, cubed fairly small, add carrots, potatoes, celery, onion, sprinkle a little brown gravy mix or stew meat seasoning, tablespoon of water or so and then fold up foil on top and ends. Place on hot coals - not flaming fire. You can test with a fork or knife and be careful of the steam when opening. Also, you can use chicken too, maybe a tsp. of chicken gravy mix or dried onion soup mix on top.
There are also several "dutch oven" campfire cooking websites. My brother-in-law makes a great chocolate cake with cherry pie filling in it with just hot charcoal on the bottom and the lid.

The first thing I think of is smores.You roast a mashmallow on a stick by the campfire and have a hershey candy bar handy then slap one big marshmallow and a piece of chocolate between two graham crackers. pretty good stuff ! linda
