Breakfast Haystack??

A haystack is a fairly common supper among the Amish.  It’s a favorite among young people and those just seeking an easy but hearty Sunday dinner.  A haystack is a layered dish of usually taco-seasoning drenched hamburger, lettuce, tomato, peppers, sometimes potatoes and all covered with a mound of shredded cheese.  The supper resembles a haystack.  A breakfast haystack is a more recent but no-less popular variation making the rounds in Amish settlements.  As the photo below shows, you put biscuits as your base and then pile diced ham, tomatoes, peppers, even some jalapeno peppers, plenty of eggs, some cheese and then drown the whole thing in sausage gravy.  This is breakfast haystack or a.k.a. “heart attack on a plate.”:)

        We have something in our restaurants here we call Breakfast Skillet….this is about the same thing. Ours usually has hash browns on bottom, then, ham, bacon or sausage(or all three), 2 eggs however you like em, peppers and onions(mushrooms if you like), then topped with shredded cheese or white sausage gravy…yummmmmm!

    Where can I get the frozen TV dinner version of this bad boy? As much as I love it I’ve been on the Poland potatoes-and-pierogies diet too long, so I’ll take my haystack, along with the Tums Kevin :)

    That does look mighty unhealthful, but it also looks to be mighty tasty. It sort of seems to be in the same spirit as a garbage plate from Nick Tahou Hots (http://en.wikipedia.org/wiki/Garbage_Plate#Garbage_Plate) or Hawaii’s loco moco (http://en.wikipedia.org/wiki/Loco_moco). Along with both of the aforementioned treats, I’ll now add this to the list of just-this-side-of-disgusting (but not really) culinary feats that I long to partake of.
