Continuing with our pumpkin theme, Amish Cook find a myriad of uses for these flaming orange round fruits. Or are they vegetables? Anyway, Lovina is often trying new cookie recipes to please her brood of six children. One such favorite this time of year, using homemade pumpkin from the garden is this:

PUMPKIN COOKIES

1 cup lard

2 cups pumpkin

2 cups sugar

4 ½ cups flour

2 teaspoons baking soda

2 teaspoons baking powder

2 teaspoons cinnamon

Cream together lard, squash, and sugar. Add dry ingredients. Add 1 cup dates, raisins, or nuts if you prefer. Drop by teaspoon on cookie sheet and bake at 350.
